This is genuinely one of those recipes that truly takes 10 minutes to make. It looks impressive but there’s...
Red Lentil Dahl
This comforting dish is packed with plant-based protein, fiber, and flavour! ️ It’s the perfect meal to nourish your body and soul while keeping things simple and tasty.
Ingredients:
- 1 cup red lentils, rinsed
- 1 onion, chopped
- 2 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 can coconut milk (400ml)
- 450ml vegetable stock (bouillon is my fave!)
- 1 tbsp curry powder
- 1/2 tsp turmeric
- 1/2 tsp cumin
- Salt & pepper to taste
- 1 tbsp olive oil
- Fresh coriander, chopped (for garnish)
- 20g ghee (or grass-fed butter)
Method:
- In a large pot, heat olive oil over medium heat. Add onion, garlic, and ginger. Sauté for 3-4 minutes until fragrant.
- Stir in curry powder, turmeric, cumin. Cook for another minute to bring out the spices.
- Add red lentils, coconut milk, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat to low. Simmer uncovered for about 25-30 minutes, or until lentils are tender and the dahl has thickened.
- Stir in the butter and adjust seasoning to taste.
- Garnish with fresh coriander and serve over rice or with warm naan bread!
