Pistachio & Peanut Butter Chocolate Bark

This is THE simplest recipe to make. You only need four ingredients, and the only ‘cooking’ that’s involved is tempering the chocolate.

You can also swap the peanut butter for any nut butter you like (hazelnut and almond butter are my favourites) and of course swap the nuts on top.

I’ve made a ‘nutella’ chocolate bark before by simply omitting the peanut butter for hazelnut butter and pistachios for hazelnuts. It was absolutely DELICIOUS.

These also make lovely little homemade gifts too. Now, onto the recipe…

Ingredients (makes 14 bars)

  • 360g dark chocolate (min 70% cocoa solids)
  • 100g salted pistachios
  • 1 tbsp cinnamon
  • 5 tbsp peanut butter

Method:

Temper the chocolate by breaking it down into chunks in a bowl over a pan of hot water. Mix gently until all the chocolate is melted. Add cinnamon and combine into the mixture.

Line a baking tray with parchment paper and pour the chocolate onto the tray, spreading it until it’s approx. ½ cm in consistency.

Add dollops of warmed through peanut butter and swirl into the chocolate.

Sprinkle pistachios onto the chocolate and set in the fridge for 20 minutes.

You can keep these in the fridge for five days or freeze them for up to a month.
