Matcha Mint Choc Chip Cookies

Matcha and dark chocolate really are a match made in heaven. The flavours perfectly compliment each other, with earthy matcha and decadent rich dark chocolate offering a delicious marriage of flavours.

These cookies are naturally gluten free, plant-based and free of refined sugars. These tasty treats boast a number of health benefits. Firstly, they do not contain any saturated fat or refined sugars found in traditional cookies. Matcha and dark chocolate are also rich in minerals and are potent antioxidants. Dark chocolate has been shown to lower blood pressure, controls blood sugar and helps improve cognitive function.

Consuming matcha has been shown to reduce the effects of stress. So feel free to sit down with these and enjoy them with a cuppa.

Ingredients
• 2.5 tsp mint matcha
• 1/2 tsp vanilla extract
• 135g oats, blitzed into a flour
• 10 dates, soaked
• 30g dark chocolate, chopped
• A pinch of salt
• 2 tbsp maple syrup
• 20ml oat milk

Firstly, preheat the oven to 180c and soak the dates in boiling water for 10 minutes before draining in order to soften them.

In a food processor (or blender) mix all the ingredients apart from the chocolate to form a sticky dough.

Line a baking tray with parchment paper and scoop 9 equal portions onto the paper. Take the chocolate chips (or chopped chocolate chunks) and press several into the surface of each cookie. Bake in the oven for 20 minutes. Remove from the oven and allow to cool before tucking in. Enjoy! 🍪
