Green Houmous Bowl

This is genuinely one of those recipes that truly takes 10 minutes to make.

It looks impressive but there’s minimal prep. Yes, cleaning the food processor is a little laborious (you can use a nutri bullet instead or just mash the ingredients together in a bowl) but it does leave a creamy, mooreish consistency.

This dish is fresh, absolutely amazing for skin and will leave you full and satiated without that afternoon post-lunch crash.

Ingredients (serves 2)

  • 2 garlic cloves
  • Handful of basil
  • Handful of parsley
  • 1 Medium avocado
  • 1 tbsp olive oil
  • 1 200g tub of houmous
  • Juice of 1/2 lemon
  • 80g green peas (cooked)

Roasted veg topping:

  • 1 aubergine, chopped into cubes
  • 2 handfuls of tenderstem broccoli
  • 1 red pepper

Simply throw the ingredients for the green houmous into the food processor or a nutri bullet and blend.

Add the veggies with a little olive oil and S&P to the air fryer for 8 minutes at 190c. You can also oven roast them by adding them to the oven at 180c for 20 minutes.

Add the green houmous to the plate and top with roasted veg. It’s as simple as that.

Enjoy!
